Mushroom Soup Cream: Recipe Step-by-Step
Ingredients
- 30g / 2 tbsp unsalted butter
- 1 onion
- 2 garlic cloves
- 400g white mushrooms
- 200g Swiss Brown/Cremini mushroom
- 800 ml vegetable stock
- 1/4 tsp salt
- 1/8 tsp black pepper
- 200 ml cream
Instructions
1. Cutting mushrooms
Cutting mushrooms is a piece of cake! Just cut them into 4 pieces and then chop them into 3 or 4 smaller pieces. It’s as simple as that!
2. Sauté onion and garlic
Melt that creamy butter in a large pot over medium-high heat.
Add those fragrant onions and garlic, and let them fry for about 3 minutes. We want them to become nice and soft, but not too golden.
3. Cooking mushrooms
Add the mushrooms and let them cook for 10 minutes.
Stir them occasionally. Don’t worry about browning them a little.
4. Slow cook for 15 minutes
Add the delicious vegetable broth and season with the salt and pepper we have prepared.
Let it boil over medium heat and then reduce the heat to medium-low.
Allow it to simmer gently, uncovered, for 15 minutes to obtain a delicious result.
5. Cream
Add a little creaminess by adding cream or crème fraiche, and let it simmer for another 5 minutes.
6. Grind
Transfer the mixture to a blender and, if necessary, do it in batches. Remove the lid from the blender and cover it with a folded kitchen towel.
Finally, blend until you obtain a homogeneous mixture.
7. Return the mixture to the pot
Cook over low heat for a while.
Just a minute or two, until the bubbles caused by the mixture start to calm down, and the soup reaches that perfect level of heat.
8. Serve
Serve the soup on plates, giving it a generous portion.
Add a touch of elegance with a drizzle of extra virgin olive oil or cream.
Don’t forget to sprinkle some croutons and parsley.
And of course, make sure you have bread ready to dip!
