You will need

  • Hammer or utensil that allows you to crack the coconut
  • Sharp knife
  • High-speed blender or food processor
  • Stainless steel pan with lid
  • Metallic spoon
  • Fine strainer
  • Sieve or fine cotton cloth
  • Glass jar with airtight lid

Ingredients

  • 2 fresh, mature coconuts
  • 1 cup hot water

Instructions

  • Crack the coconuts with the help of a hammer. Carefully pry the coconut open and collect the water inside and pour into the blender.
  • Use the knife to separate the coconut meet from the shell. Rinse well. Cut the coconut meat into smaller pieces to ease blending.
  • Place the coconut meat in the high-speed blender or food processor. Add the hot water and blend it all.
  • Insert the cotton cloth into the strainer, well spread out to avoid any leakage. Pour the entire liquefied contents over the strainer or the cotton cloth so that the liquid falls into the glass jar.
  • When you squeeze out the coconut milk, pick up the cloth with all the pieces and squeeze a little to extract the liquid still contained in it.
  • Close the jar and put it in the refrigerator, where it should remain for at least eight hours.
  • After this time, due to the difference in density, you’ll notice a thick layer of white coconut oil atop the milk. Carefully scoop up the oil with a spoon and place it in the stainless steel pan.
  • Cover the pan and place over low heat for a few minutes. If you see that there are still solid remains, you can proceed again to filter.
  • All that remains is to pour the oil into a clean, airtight container for use as needed.

— For a more refined oil, you can repeat the straining process using a finer mesh sieve or cheesecloth.
